Orange cake

Ingredients

  • 250 grs filo pastry
  • 2 eggs
  • 50 gr. erythritol
  • 20 gr. coconut sugar
  • 1 grated orange zest @bollofruits
  • 125 g vegetable vanilla almond yogurt (you can use plain Greek yogurt)
  • 1 tsp vanilla essence
  • 1 tsp baking powder
  • 50 ml of soft avoe
  • 50 ml melted butter
  For the syrup: Juice of 1 orange @bollofruits. 1/2 cup of water at room temperature 50 grs erythritol 1 cinnamon stick

Step by step :

In a bowl beat the eggs together with the coconut sugar and the erythritol (or sweetener of choice). Stripe

Add the orange zest, yogurt, vanilla and baking powder. Beat until well blended. Stripe

Gradually incorporate the filo pastry in pieces and stir with a spatula using wrapping movements. Stripe

Grease or line a round baking pan, pour the contents of the bowl and decorate with orange slices on top. Bake 30 min in the air fryer at 180°C. After 15 minutes, cover with aluminum foil (1 hr in oven at 180°C). Stripe

For the syrup: add all ingredients in a saucepan and bring to a boil over medium heat, boil for 2 minutes. Stripe

Wait for the cake to cool and add the syrup over it. Wait again for it to cool. ready! 🍊 Stripe
