Mango custard

Ingredients

  • 500 g mango pulp (approx. 2 medium mangoes)
  • 1 and 1/2 cups plant-based drink
  • 2 tbsp lime juice
  • 3 tbsp cornstarch or other thickener
  • Optional: 2 tbsp date paste

Step by step :

Blend all ingredients in a food processor until you obtain a fine and smooth cream. Stripe

Add to a saucepan and cook on a medium heat for around 15 minutes, stirring occasionally, until it has thickened and has a creamy texture. Stripe

Pour into glasses or individual bowls, leave to cool then refrigerate for at least 4 hours to finish thickening. Stripe
