Nectarine and mint lollies

Ingredients

  • 250 g nectarine (already peeled and pitted)
  • 250 ml water
  • A handful of mint leaves
  • Sweetener to taste (2 tbsps erythritol)

Step by step :

Boil the water in a saucepan over a low heat with 15 mint leaves and the sweetener. Stripe

Leave to cool and remove the leaves. Peel and pit the nectarines, then blend together with the infused water. Stripe

If you want a more intense mint flavour, you can add some leaves and mash them together with the mixture. Stripe

Pour the mixture into lolly moulds and put in the fridge for at least 5 hours. Stripe
