Healthy cinnamon and orange roll

This delicious recipe that our friends @fit_happy_sisters have prepared with cinnamon and Bollo oranges, is ideal for a snack, with a lot of roll! You will love it both for its texture and flavor. And in addition to being super delicious, they are healthy and easy to make.

Ingredients

  • 2 whole eggs
  • 2 egg whites
  • 1 medium orange
  • 100 g oatmeal or other
  • wholemeal flour
  • 1 tsp cinnamon
  • Sweetener to taste

Step by step :

Grate the peel of the washed orange (do not go as far as the white part). Squeeze the orange and reserve the juice. Stripe

Separate the whites from the two eggs and beat them with the other two egg whites (4 in total) until stiff. Stripe

Mix together the flour, cinnamon, sweetener, the 2 yolks and the orange juice. Transfer the mixture to a bowl. Add the stiff egg whites to this bowl and stir with enveloping movements so that the whites do not drop too much, combining well with the rest of the ingredients. Stripe

Preheat the oven to 180ºC. Pour the mixture on to the tray and spread with a spatula to form a rectangle that is as evenly distributed as possible. Bake for 10 minutes at 180ºC in the middle of the oven. Stripe

Prepare the cream. 120 g previously soaked dates + the juice of an orange + 1 tsp cinnamon. Mash together. Add a layer of the cream on top of the cake. Roll from one end to the other, being careful not to break the roll. Stripe

Wrap it up inside the grease-proof paper and place in the fridge on a flat surface for at least a few hours. After this time, remove the paper, decorate with more cream and, if you wish, cut into slices. Stripe
