Homemade tacos with prawn and melon filling

Fresh, simple and with #BolloFruits melon… A super quick and healthy recipe from our friends @fit_happy_sisters to celebrate the arrival of Christmas. Write down this recipe for Christmas because it is a super tasty and healthy option!!

Ingredients

For the tacos:
  • 250 g precooked corn flour
  • 320 ml tepid water
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • Pinch of tumeric (optional, to add colour to the tacos)
For the filling:
  • 1/2 green pepper
  • 2 slices of melon
  • 1/2 avocado
  • Cherry tomatoes
  • Prawns (defrosted or fresh)

Step by step :

Mix the ingredients together and form 10 balls of the same size. Stripe

Place the ball in between two pieces of cling film and flatten with a rolling pin until you have a very flat circle. Cook for 2 minutes on each side in a frying plan. Stripe

To give them the shape of a taco, let them cool in that shape, for example by placing them upside down on a rack. Stripe

Cut all ingredients for the filling into very small pieces and season with salt and oil. Stir and fill the tacos. Stripe

Assemble the tacos and serve with a sauce, for example, a Greek yoghurt with a little olive oil, salt and pepper. Stripe
