Tangerine marble cake

Christmas is coming, and a good cake to share with family or friends is always welcome. As a snack or after lunch, it is a sweet that never fails. So, save this recipe because it is explosively tasty and extra fluffy in texture. A combination of tangerine and chocolate full of flavor that will become one of your favourite sponge cakes. Enjoy!

Ingredients

  • 100 ml tangerine juice
  • Zest of 2 tangerines
  • 150 g flour
  • 150 g sugar
  • 25 ml extra virgin olive oil
  • 4 g baking powder
  • 4 large eggs
  • Pinch of salt
  • Butter for greasing the tin and for mixing with the chocolate powder
  • 8 tbsp chocolate powder

Step by step :

Preheat the oven to 160ºC. Stripe

Whip the egg whites with a pinch of salt and when they become clear, add half the sugar and beat until stiff. Stripe

Beat the yolks with the remaining sugar, juice, zest and oil. Once mixed, add the flour sifted with the yeast and beat again. Stripe

Incorporate the beaten whites to the flour mixture then stir with enveloping movements until everything is mixed. Stripe

To make the chocolate marbling, take half of the mixture and add the chocolate powder that has been dissolved into the warm butter. Stripe

Pour the chocolate and chocolate-free mixtures into the tin according to how you want to marbling to look. You could add one ladle of the chocolate mixture followed by one of the chocolate-free mixture, or have a chocolate base, whatever you prefer. Bake for 30 minutes. Stripe
